Cook your eggs with a little bit of soy milk instead of butter or regular milk.  I enjoy scrambled eggs and I eat 1 egg per day.  In order to make my scrambled eggs a little more “fluffy” – I tried adding in some soy milk and it worked like a charm.  Also, if you’re making an omelet, adding the soy milk into your mixture helps give it a little more substance, especially if you’re only using 1-2 eggs.

In a crunch?  Eat a protein bar.  From my own research (and by research I mean eating!), I have found that the Kashi Go Lean bars and Luna bars are my favorites.  The Kashi Go Lean bars are higher in protein and higher in calories (around 19 grams of protein and 290 calories).  The Luna bars have less protein but are fewer calories (180 calories).  I find that the Kashi Go Lean bars keep me full for a longer period of time since it’s a higher consistancy bar.  But if I don’t want the extra calories that day, I’ll have the Luna Bar.  The Luna Bar could be considered a snack, whereas the Kashi Go Lean bar should probably be equated to a meal since it’s so high in calories.  Kashi does have a product called a Kashi Go Lean Roll bar which I don’t like very much at all.  My favorite flavors always include fruit and nuts (Luna) or peanut butter and/or chocolate (Luna and Kashi).

Instead of making lasagna with noodles – try it with eggplant!  Thinly slice the eggplant the vertically and put a little bit of salt on the slices.  Eggplant has a lot of moisture so when you put the salt on it, the water will begin to appear.  After about 15-20 minutes, wipe the water off with a towel.  Then layer your casserole dish with the slices of eggplant like you would the layers of pasta.  You’ll be amazed at how good it tastes and it’s healthy!

If you’re getting a stir fry or some Asian food, peanut sauce is super fattening, sugary and salty.  But damn it’s good!  Get it on the side and lightly dab your fork into the peanut sauce before putting your food on the fork.  You’ll be surprised how little you need to get the taste.  I did this recently when getting Thai Express at R. Thomas, because last time my quinoa was swimming in the peanut sauce.  This is also a great method to use when eating salad with high calorie salad dressing.

Use lettuce wraps instead of flour tortillas when getting fajitas!  Still fun to eat minus empty carbs.
